Food | Simple Chicken Salad

This was so easy to make! I cooked it up at 7am and it was in the fridge within a half hour, ready for lunch later.

Poached Chicken
– bay leaf, dash of basil, oregano, thyme (or seasonings you enjoy)
– 2 chicken breasts 

Fill a pot with the chicken breasts, seasonings and water one inch above chicken.
Bring the pot to a boil.
Once boiling, put flame to low and cover. There should be a very little simmer.
Simmer 10 minutes.
Turn off the flame, let the chicken sit in the hot water additional 15-20 minutes.
Remove chicken; shred with a fork or dice 

Chicken Salad
– 1/2c mayonnaise (more depending on your taste)
– 1tbsp lemon juice
– 1/4c chopped or sliced almonds
– 1tsp black pepper

Mix all ingredients above with poached chicken
Refrigerate
Enjoy on bread, by itself or rolled up in a lettuce leaf
