A recipe that includes broccoli and cheese is the key to my heart. This recipe I found months ago and have wanted to try for the longest time, but I always managed to eat the broccoli I bought before I remembered this recipe. I didn’t realize it could be made with frozen, duh.
I originally found this recipe on Pinterest as a photo, but had to find the the actual recipe since it was pinned from a fake site. I don’t like those! I updated my pin and was happy to find a simple, quick way to enjoy broccoli that Chris and Monkey will really like, too.
I took the recipe and modified it to just make what fit the amount of broccoli I bought on sale at the market.
– broccoli steamed (or frozen defrosted and drained)
– cheddar cheese (or your cheese of choice)
– egg (I used one for a small bunch of broccoli
Mix the ingredients with your hands to combine well.
Form into balls or patties.
Place on a sprayed sheet or parchment paper.
Bake at 375 degrees for 25 minutes, flipping them over after the first 15 minutes.
I roasted butternut squash next to the bites to use up the rest of the pan.
There you have it. A simple, healthy meal or snack.
My review of these: awesome and definitely will make again. The flavors were yummy and it’s a recipe I wouldn’t have to look at again. Something I could pull from my bucket of tricks in a pinch.
