3 Ingredient Energy Bars. Or as I like to think of them, tasty fruit snacks for Mom. #thankful

I’m a simple kind of girl. I love easy meals and recipes that I can remember after I follow them once. I want an arsenal in my mind of go-to meals and snacks. With a toddler usually underfoot pushing me away from the counter and trying to open the oven while it’s baking something good, I don’t have time to follow long drawn out recipes. Nor do I like to buy a giant bottle of something to use a tablespoon of it (like we used to).

When I happened upon these 3-ingredient energy bars, I couldn’t help but be thankful. Every energy bar or what-have-you I’ve seen includes oats, honey, and a host of other ingredients. Three was my kind of idea, and of course I made it more complicated and added a forth or a fifth at times, ha.

– 1 cup of dates
– 1 cup of nuts (I used almonds and walnuts)
– 1 cup of dried fruit (apricots and cranberries were my pick)

I chop the nuts by pulsing them a bit in the food processor before adding the rest. Then I put in the fruit and dates. Turn the food processor on, and hold it down like I do mine, haha, and let it do it’s magic a few minutes. When it’s all done, you’ll have a nice consistency that’s sticky and coming together.

Once combined, press it in a pan or on a piece of plastic wrap to thin it out. I use wax paper in a pan. Place in the fridge to let it come together and harden a bit. Then cut into shapes and layer on wax paper or put in baggies to grab and go.

Best energy bars ever. I love them as a snack and have made them three different ways so far. I’ve got the recipe memorized already: 1 cup, 1 cup, 1 cup. Simple enough!
