I’ve got my first giveaway for you today 🙂

First though, I’ll share a little of our evening last night. The best laid plans can go awry, or something like that right? Well, I never got in my workout last night, but I’ll be doubling up today to make up for it. So much for getting back into the groove.

First let’s start off with dinner last night. Chris tried to be a sweet husband and make my usual kabocha squash, but I knew something wasn’t going to work out right when he was peeling it. Hmmm… he followed a recipe online, but it turned out to be soggy and way too salty. I think next time he’ll leave the vegetable roasting to me.

So we ended up with this:

Chris made some couscous concoction that I refused to eat. It looked like a bad cafeteria lunch. I ended up with a plate full of romaine, balsamic and a few slices of ham. Miles had mixed vegetables. He was loving his carrots, corn, peas, and green beans. It was an unplanned meal if you couldn’t tell.

I also roasted a few cassava fries and shared them with Miles. He didn’t like them:
